    List of Ingredients




    3 T green pea flour (Bob's Red Mill) + sorghum flour to 1 cup
    ¾ c tapioca
    ½ c light brown sugar
    ½ tsp Xanthan gum
    3 tsp baking powder
    ½ tsp salt
    2 T poppy seeds
    1 T coarse sugar
    1 egg
    ¾ c milk of choice
    ¼ c oil
    1 tsp vinegar
    1 tsp vanilla

    Recipe



    Mix liquids and dry ingredients apart, and then combine.

    Fill greased muffin cups 2/3 full and sprinkle with sugar.

    Bake at 400 degrees for 20 minutes. Batter will be light green, but muffins are light yellow.
