    Note from BL: This is the original recipe we started from. We use about 2 1/2 to 3 cups of gf flour mix to replace the Arrowhead Mills Bran Muffin mix. I also use 1/4 of coconut oil. If you want to use honey, about 1/2 cup, but frozen concentrate mixed with 1/8 - 1/4 tsp of stevia works as well. We have also used 1/3 cup of maple syrup. The original recipe was vegan and as you can see, posted by a by-feel kind of cook - smile. Josh has also made these using 1/2 cup super ripe bananas in place of the egg and dried pineapple. Or has also used cranberries, craisins or dried cherries in place of the pineapple. It's a pretty versatile recipe. His favourite was using some chunks he made from 85% pure equadorian and 75% pure madagascar chocolate but man those were costly muffins - smile.

    List of Ingredients




    Arrowhead Mills Bran muffin Mix
    1 egg (or equivalent in egg replacer)
    1 whole orange
    frozen concentrated orange juice
    dried pineapple

    Recipe



    Make the muffin recipe on the Bran muffin Mix package *except* don't use oil or fat, substitute the orange juice concentrate for the honey. Use egg substitute according to package directions instead of egg.

    Grind whole orange in blender ( even peels) and add with pineapple to the mix. You will probably need to add a little extra dry muffin mix to offset the gooiness of the additional moisture.

    Bake as directed.

    They generally stick to the paper muffin cups at first, but they will come off easily after sitting around for a day.
