    List of Ingredients




    3/4 cup Sorghum Flour
    3/4 cup Brown Rice Flour
    1 tsp Potato Flour (not potato starch)
    1tsp Xanthan Gum
    1/4 tsp salt
    1/2 tsp Baking Soda
    3/4 cup Sugar
    1 tsp Ground Cinnamon
    1/2 cup Chopped Walnuts or Pecans
    2 small eggs
    1/2 cup of Safflower oil
    4oz of crushed pineapple
    1tsp Vanilla Extract
    1 Med-Large shredded Zucchini

    Recipe



    Pre-heat oven to 350 degrees.

    Combine first nine ingredients in a med bowl.

    In a separate bowl combine eggs and oil mix well, then add pineapple,vanilla, and zucchini.

    Combine the wet mixture with the dry mixture and mix until moist.

    Pour in greased muffin pan and bake about 15 min you may have to cover towards the end to keep them from getting too brown.

    Michelle's Note: I am not the best for timing my
    bake goods just watch them.
