Buckwheat Pancakes

List of Ingredients
1 cup dark Buckwheat flour
1/3 cup potato flour (not potato starch)
3 tsp baking powder
1/2 tsp salt
1/2 tsp baking stevia
1 lrg egg
3 Tbs. coconut butter
1/4 tsp vanilla
1/2 cup coconut milk
1 cup water
Recipe
Mix all ingredients.
Ladel onto hot greased griddle into small round cakes.
Fry on heated griddle until brown on underside.
Turn and cook until brown on other side.
Tom's Notes: My daughter had maple syrup on her first one but found it too sweet for her taste so she used a little jam and said they were great.
I just spread mine with butter while they are hot.
