    Buttermilk Pancakes

    List of Ingredients

    1 cup flour (I think I used featherlight)
    1/2 tsp baking soda
    1 tsp sugar
    3/4 tsp baking powder
    1/2 tsp salt
    1 egg
    1 cup buttermilk (I used 1 tsp lemon juice and coconut milk)
    1 Tbsp melted butter (I used Earth Balance GFCFSF)

    Recipe

    Preheat pan over medium heat and season with oil. In a medium bowl, sift together flour, baking soda, sugar, baking powder and salt; set aside. Beat egg until light and fluffy (OOPS, I skipped this direction and it still worked). Add egg, buttermilk and butter to dry mixture; mix until blended. Cook until pancakes bubble, turn over and continue cooking until pancakes are light golden brown.
