    List of Ingredients




    2lbs fresh cherries, rinsed, pitted and halved
    3/4 c. sugar
    1/3 c. orange juice
    2 Tbsp. lemon juice
    1 vanilla bean, split lengthwise

    1 c. gf flour mix
    1/2 tsp. xanthan gum
    1/4 c. unsweetened cocoa
    2 tsp. baking powder
    1/4 tsp. salt
    1 lg. egg
    1 c. milk substitute (I use hemp milk)
    3 Tbsp. oil

    Recipe



    In a 3- to 4-quart pan, over medium heat, stir cherries, 1/2 cup sugar, orange juice, lemon juice, and vanilla bean until cherries are soft, about 10 minutes.

    Remove from heat; if making up to 2 days ahead, cover and chill (reheat before serving).

    In a bowl, mix 1/4 cup sugar and the flour, xanthan gum, cocoa, baking powder, and salt.

    In another bowl, beat egg to blend with milk and oil.

    Stir into flour mixture until evenly moistened.

    Cook in waffle iron.

    Serve warm with poached cherries on top.
