    Family Applauded Pancakes

    List of Ingredients

    3 eggs, beaten
    2 C. milk
    4 ½ T. oil
    3 T. honey
    2 tsp. vanilla extract (or use vanilla powder)
    2 C. brown rice flour – Be ready to add ½ C. more if pancakes spread too much
    ½ C. potato starch
    ½ C. tapioca starch
    2 T. baking powder
    1 T. baking soda
    ½ tsp. vanilla powder (or use vanilla extract)
    blueberries, optional

    Topping Options:
    applesauce
    maple syrup
    fruit syrup
    peanut butter

    Recipe

    Using a 4 cup liquid measuring cup, mix eggs, milk, oil and honey.

    In medium mixing bowl, thoroughly combine brown rice flour, potato starch, tapioca starch, baking powder, baking soda and vanilla powder (if using).

    Add egg mixture to flour mixture in bowl and blend well.

    Add blueberries (if using).

    Pour 1/4 C. mix onto 200 degree griddle.

    Set timer for 1 minute 30 seconds to check pancakes. Turn when bubbles pop on top.

    Cook on second side.

    Top as desired with applesauce, maple syrup, fruit syrup or peanut butter.

    Serves 6.

    Freezes well.
