JB's really inexpensive GFCF pancakes

List of Ingredients
2 c. cooked rice (I have used either brown & white; hot or cold)
1/3 c. oil
3 ripe (or over-ripe) bananas
4 eggs
3 T. gf baking powder (I use aluminum-free)
1 t. cinnamon
1/2 to 1 c. corn meal
Recipe
Put rice and oil in food processor and process until thick and smooth, like paste.
Add bananas, process until smooth.
Add other ingredients, except corn meal.
Transfer to a bowl and stir in enough corn meal to make it the right consistency for batter.
Cook on a heated griddle.
These take longer than flour pancakes, so keep heat medium/medium- low, and be patient (don't turn until they dry out along the outsides).
JB's Note: They freeze and reheat well, though ours seldom make it that far.
