    Peach Pancakes

    Recipe Introduction

    An oven-baked pancake with the sweet lush taste of ripe peaches. Perfect for weekend breakfast or brunch for guests.

    List of Ingredients

    6 large peach halves sliced
    1/2 cup GFCF milk
    1/4 cup GFCF baking or pancake mix
    1 egg
    1 tablespoon sugar
    1/2 teaspoon vanilla extract
    Confectioners' sugar

    Recipe

    Heat oven to 400 degrees.

    Meanwhile, pour milk into blender container. Add pancake mix, egg, sugar and vanilla. Blend until smooth.

    Arrange peaches in bottom of 10-inch pie plate lightly
    oiled.

    Pour mixture in blender over peaches. Bake until golden brown, 15-20 minutes.

    Sprinkle with confectioners' sugar. Serve hot, cut in
    wedges.
