    1 cup mashed cooked sweet potatoes ( pumpkin could be substituted here easily)

    1 1/4 cup mock buttermilk (recipe filed under MYO)

    1 egg

    1 Tbls coconut oil

    2 cups gluten free pancake mix (I used Bob's Red Mill)

    1/4 cup sugar

    1/2 tsp cinnamon

    Recipe



    Preheat waffle iron.

    In medium bowl, combine sweet potatoes, mock buttermilk, egg and oil.

    In another bowl, combine pancake mix, sugar and cinnamon.

    Stir sweet potato mixture into dry mixture. (Batter is thick!)

    Coat waffle iron with oil or nonstick cooking spray.

    Add 1/2 to 3/4 cup batter to waffle iron and cook until crisp.

    Please note it takes longer to make gf waffles than ones made with wheat flour.
