Black Currant Pie Filling

Use with Basic Pie Crust for a fabulous pie.
List of Ingredients
3 Cups fresh Currants (heaping), crushed
1/2 cup sugar
3 tbsp minute tapioca
1/4 tsp salt
1/2 tsp grate orange peel
2/3 cup broken walnut pieces
Recipe
Crush 1/2 cup of currants. Add sugar and tapioca. Cook and stir until bubbly; Cook 2 minutes more. Add remanining whole berries, stir in orange peel and walnuts.
Fill pastry with the filling and dot with 2 tablespoons of
GFCF margarine, cover with top pastry making slits for steam to escape.
Bake at 400 for about 35 minutes.
