GF/CF Pumpkin Pie

Recipe Introduction
Based on the Libby pie recipe.
List of Ingredients
1/4 cup brown sugar
1/2 tsp salt
1-1/2 tsp cinnamon
1/2 tsp ginger
2 large eggs
1 can (15 oz) 100% pure Pumpkin
1 can (15 oz) coconut milk
1-1/2 cup GF Graham cracker crumbs
1/2 cup melted butter or GFCFSF margarineRecipe
Pre heat oven 425 degrees.
Mix GF Graham cracker crumbs and butter together.
Press into a 9" in deep dish pie pan or 2 8" in regular pie pans.
Mix sugar, cinnamon, salt, ginger in a bowl.
Add eggs,pumpkin, coconut milk.
Pour in to pie crust(s).
Bake for 15 minutes at 425.
Reduce heat to 350 and bake for 1 hour 15 minutes --checking after 1 hour.
Cool for 1 hour.
Serve or refrigerate.
