    Maple Pumpkin Pie

    Recipe Introduction

    All in all, this is pretty close to traditional pumpkin pie flavor, with a hint of maple.

    List of Ingredients

    1-9 inch deep-dish GFCF pie crust
    1 1/2 cups pumpkin puree
    1/2 cup maple syrup
    1 1/2 cup GFCF 'cream' (like Rich's liquid)
    4 eggs
    2 tablespoons sweet rice flour
    1/4 teaspoon nutmeg
    1/4 teaspoon ground ginger
    1 teaspoon cinnamon

    Recipe

    Whisk all ingredients until blended. Pour mixture into the
    prepared pie shell.

    Place the foil shield around the crust edges to prevent overbrowning.

    Bake 40-45 minutes (knife inserted 1 inch from the edge comes out clean)

    Note from Angela: The maple in this recipe is very subtle; the seasoning, and heavy custard, pretty much overpowers it. You may also find that this is not sweet enough; to sweeten it more, incorporate up to 1/2 cup sugar with the eggs.
