    List of Ingredients




    CRUST
    1 1/2 cups Eden Organic Quinoa
    1 cup walnut pieces
    1/2 teaspoon Eden Sea Salt
    3 Tablespoons Eden Extra Virgin Olive Oil
    1/2 cup Edensoy Vanilla
    2 Tablespoons organic maple syrup

    FILLING
    5 cups nectarines or peaches, sliced, (about 7 medium)
    1 1/2 cups Eden Organic Apple Juice
    1 pinch Eden Sea Salt
    3 Tablespoons Eden Organic Kudzu Root Starch, dissolved in 1/4 cup cold water

    Recipe



    Preheat oven to 350°.

    Place quinoa in a blender and grind about 5 minutes until it becomes fine flour or grind in a flour mill.

    Remove and place in a mixing bowl.

    Coarsely grind the walnuts in the blender and place in the bowl.

    Add sea salt, mix, and add the oil, Edensoy and
    maple syrup.

    Mix thoroughly.

    Press the dough evenly into a 9" pie plate to form the crust.

    Pre-bake the crust for 10 minutes.

    To keep the buttom of the crust from puffing too much, cover the bottom with dried beans or pie weights before putting in the oven. (called blind baking)

    While the crust is baking, place the nectarines, juice and sea salt in a medium saucepan and bring to a boil.

    Reduce the flame to low and slowly add the dissolved kuzu, stirring constantly to prevent lumping.

    When thick, about 1 minute or so, pour the filling into the pre-baked crust.

    Bake another 10 minutes until the crust is golden brown.

    Remove and cool before slicing.

    If you prefer you can add a top crust or a lattice top.

    Bl's Note: I haven't tried this recipe, so have left the Eden Soy ingredients as original posted on their website. You can use other brands, of course.
