Vegan / Gluten Free Pie Crust

List of Ingredients
1 cup br. rice flour
1 cup garbanzo bean flour
3/4 vegetable shortening
2 tsp. xantham gum
1/2 tsp. salt
1/3 cup cold water
Recipe
Mix dry ingredients, add shortening, mix until lumps are the size of peas--then add in cold water.
Break into 2 balls.
Roll out into big circles (between 2 peices of wax paper), lay in pie pan and cook according to your pie recipe.
Lauren's Notes:I LOVE this pie crust I've just recently been making from the Vegan and Gluten Free list--maybe it would work for pumpkin pie as well? I'm hoping to try it...(Perhaps halve this recipe for just a bottom crust--it makes a bottom and top crust--works wonderfully w/ apple and raspberry pie!)
