    List of Ingredients

    Pizza sauce:
    1 can tomato paste
    1 can tomato sauce
    1 tbls sugar
    2 tbls Italian seasoning (or adjust to taste)

    Paula's GF Bread Mix:
    1 1/2 c. millet flour
    1 1/2 c. sorghum flour
    1 c. tapioca flour
    1 c. potato starch
    1 c. cornstarch

    Crust:
    2 tbls yeast
    2 1/3 cup gf mix (Kelly used Paula's mix; see above or go to link)
    1 1/2 cup tapioca flour
    1 cup powdered milk substitute
    4 tsp xanthan gum
    2 tsp unflavored gelatin powder
    2 tsp sugar (or honey)
    1 1/4 tsp salt
    1/2 tsp garlic powder
    1 1/2 cups warm water
    4 tbls olive oil
    2 tsp cider vinegar

    Recipe

    Preheat oven to 425.

    Grease baking sheet or pizza pan.

    Mix pizza sauce ingredients together and set aside to put in pockets.

    Combine ingredients for Paula's GF Bread Mix, if using. Whisk together thoroughly until very well mixed.

    In medium bowl, combine yeast, GF flour mix, tapioca flour, powdered milk substitute, xanthan gum, unflavored gelatin powder, sugar (if not using honey), salt and garlic powder. Set aside.

    In large bowl, mix water, oil, vinegar and honey (if not using sugar).

    Add the dry ingredient mixture to the liquid mixture until combined, and then beat on high for 2 minutes. Dough will not be runny like gfcf bread, it will be more stiff.

    On a GF floured surface (Kelly used rice flour), scoop out approximately 1/3 cup dough and gently roll out into a rectangle until desired thinness.

    Add 2 scoops sauce and favorite toppings.

    Fold over and pinch ends together.

    Do this until you are out of dough.

    Bake for approximately 12 minutes or until golden.

    Yield: 10 pockets or 2 large pizzas

    Author's Notes: Since going gfcfsf, I have obviously been avoiding dairy, and so no cheese. We really miss our pizza, but making it without cheese is a little obvious to my kids ... enter the pizza pocket solution. The dough rolls out nicely! My kids loved them, and the recipe made enough to make a second batch to freeze for another time.
