Laura's Sweet Potato Curry

List of Ingredients
2-3 medium sweet potatoes, cut into 1 chunks
1 onion, diced
1 can coconut milk (or try potato milk)
1 clove garlic, diced
mustard seeds, probably about 1 tsp
cumin seeds, again, probably 1 tsp
Laura says: I sort of wing it with the rest of the spices, some turmeric, some chili powder, some roasted cumin, whatever sounds good really

Get the oil hot in a large pan, saute the onion till translucent.
Add garlic, mustard and cumin seeds.
Fry till they stop sputtering.
Add the rest of the spices and stir for a couple of minutes.
When things look/smell right, add the sweet potatoes and coconut milk, and 1/2 can of water.
Stir well, and turn the heat down, and simmer for 20 minutes or so, until the potatoes are soft.
Add salt and pepper at the end.
Note from BL: If you use the potato milk recipe filed under milks, do not add the 1/2 can of water.
