    List of Ingredients




    3 lbs. small potatoes
    1/2 cup green olives, pitted and finely chopped
    2 tsp. capers, finely chopped
    1/2 cup flat leaf parsley, chopped
    1 tsp. lemon zest, finely grated
    2 tbsp. lemon juice
    2 garlic cloves, crushed
    1/2 cup extra virgin olive oil

    Recipe



    Boil potatoes until just tender. Drain and cool slightly.

    Meanwhile, in a small bowl, whisk together olives, capers, parsley, lemon zest, lemon juice, garlic cloves and oil.

    Cut warm potatoes in half and place in serving bowl.

    Pour dressing over and gently toss.

    Season to taste with salt and pepper.

    Serve warm.

    Serves 6.
