List of Ingredients
1 cup gf tortilla bread crumbs
1 cup Gluten free flour (I used Bob's Mill)
1 Egg or egg substitute
3/4 cup Soy milk, rice milk, etc.
1 lb of chicken
3 or 4 table spoons oil of your choice
Recipe
Cut the chicken breasts into small 1 inch peices.
Place the egg and milk sub into a bowl and wisk them together.
Place the flour in a bowl and the bread crumbs in a separate bowl.
Add any seasonings to taste.
In a skillet, heat the oil on the stove.
Dip the chicken in the flour, next dip in the milk/egg mixture, then the bread crumbs.
Cook them in the oil and let cook about 2 minutes on each side (until done).
Place the nuggets on a paper towel to absorb any excess oil.
