    Chocolate Pudding

    Source of Recipe

    List of Ingredients

    2 tablespoons cocoa powder
2/3 cup prepared (liquid) chocolate DariFree
    2 tablespoons potato starch
    4 beaten egg yolks
    1/2 cup sugar
    1 tsp vanilla

    Recipe

Combine all EXCEPT eggs together in a saucepan, stir well so powdered contents are all dissolved, and keep stirring over medium heat. When the pudding is hot - but NOT boiling yet - scoop out about half a cup.

Mix this liquid in with the beaten eggs to temper them, than add the whole thing back into the pot. At this point, bring the pudding up to a boil, stirring continuously. It will thicken very quickly!

Let it cook for another 1-2 minutes after it thickens, then spoon into serving cups/bowls and refrigerate. In approximately 1-2 hours, the pudding will be set and ready to eat.

    Makes 6 servings.

Note from Stephanie: I found that it is best to eat within a day or two of making. After that, it is edible, but needs to be stirred up because the liquid starts to seperate out. It was great, because it only took about 10 minutes to make.
