    4 cups 1-inch-cubes GF bread
    2 cups any milk substitute
    1/2 cup fat-free egg product
    1/3 cup sugar
    1/2 teaspoon vanilla
    1/2 cup diced dried fruit and raisin mixture
    Ground nutmeg, if desired

    Recipe



    Heat oven to 350ºF.

    Spray 9-inch glass pie plate with cooking spray.

    Place bread cubes in plate.

    In small bowl, beat milk sub, egg product, sugar and vanilla with wire whisk until smooth.

    Pour over bread.

    Press bread cubes into milk mixture until soaked.

    Sprinkle with fruit and nutmeg.

    Bake uncovered 30 to 35 minutes or until golden brown and set.

    Cover and refrigerate any remaining bread pudding.
