    List of Ingredients




    2 1/2 C gluten free bread chunks (I used B. Hagman's Rice Bread)
    1 1/2 cup milk sub or other non-dairy liquid
    1/2 cup apple juice
    2 Tbls margarine
    1/2 cup Splenda or equivalent sweetener
    1 tsp raspberry extract
    1/2 tsp cinnamon
    1/2 tsp nutmeg
    2 eggs

    Recipe



    Preheat oven to 350 degrees.

    Oil a 1 1/2 qt casserole dish.

    Spread crumbled bread on the bottom.

    Set aside.

    In a med saucepan, combine milk sub, margarine, sweetener, extract, cinnamon, and nutmeg.

    Heat just until the margarine melts.

    Remove from heat and pour over bread.

    Beat eggs with a fork.

    Pour into the bread mixture and stir until the egg is incorporated and bread chunks have been covered.

    Bake for 45 mins.

    Melinda J's Notes: You could also probably add some dried or cut up fruit, but I didn't have any. It's not EXACTLY like traditional bread pudding, because (at least the ones
    I've eaten) sweet rolls aren't used for the bread, but my taste buds are still happy! LOL! Enjoy!!
