Vanilla Pudding - Corn and Rice free

Recipe Introduction
Note from BL: This comes out more like a cream anglais than a thick pudding, but it's a start.
List of Ingredients
1/3 c. sugar
2 1/2 Tbs. tapioca starch or arrowroot
pinch of salt
2 c. Dari-Free
2 tsp vanilla extract (or 1 tsp plus the insides of one vanilla bean)
1-2 Tbs CF margarineRecipe
Mix sugar, starch and salt in a saucepan, then whisk in Dari-Free.
Cook over medium heat continuing to stir frequently until it's nice and thick then add vanilla and margarine.
Refrigerate until it's cool.
