    1 cup quinoa flour
    1 1/4 GF flour
    4 teaspoons baking powder
    3/4 teaspoons salt
    1 1/2 tablespoons sugar
    2 beaten eggs
    2 1/4 cups milk
    1/2 cup salad oil

    Recipe



    Sift together dry ingredients.

    Combine remaining ingredients and add just before baking, beat until only moistened.

    Batter will be thin.

    Bake in pre-heated waffle iron.

    Makes 10 to 12 waffles.

    Author's Notes: The quinoa flour adds a nutty flavour and the waffles stay fresh longer than made with regular flour. If you are a celiac or are on a gluten-free diet, the pancakes can be made with l00% quinoa flour (2 1/4 cups) for a delicious breakfast treat.
