    "Creamy" Quinoa Pudding

    Recipe Introduction

    This recipe comes from Eden, the company which makes Eden Soy and several other great GFCF products. I am leaving it as is, but noting my changes. BL

    List of Ingredients

    1 cup Eden Organic Quinoa, rinsed
    2 1/2 cups Edensoy Original or Edensoy Extra Original (BL used a combo of coconut and almond milk)
    1/8 teaspoon Eden Sea Salt
    1 teaspoon organic sesame butter or organic sesame tahini (BL used peanut butter)
    2 Tablespoons organic maple syrup
    2 Tablespoons Eden Organic Kudzu Root Starch, dissolved in 3 T. cold
    water (BL used tapioca starch)
    1 Tablespoon pure vanilla extract
    1/2 teaspoon nutmeg, freshly grated or ground cinnamon

    Recipe

    Put quinoa, Edensoy (or your milk sub of choice), and salt in a saucepan and bring to a boil.

    Cover and simmer for 20 minutes.

    Add sesame butter (or your favorite nut butter such as peanut butter) and syrup.

    Mix well.

    Add kudzu (or tapioca starch), stirring constantly until mixture thickens.

    Add vanilla and spices.

    Top with your choice of chopped nuts, roasted seeds or fruit.

    Delicious warm or chilled.
