    2 cloves garlic
    1 Tbsp canola oil
    ½ cup yellow onion, diced
    1 cup rice, short grain (Spanish style)
    2 cups low sodium chicken broth
    ½ cup minced cilantro (coriander)
    2 fresh oranges, sliced

    Recipe



    1. To make Arroz Blanco heat the oil with the garlic in a skillet.

    Cook until garlic is golden brown; remove and discard garlic.

    2. Add the rice and cook, stirring constantly until puffed (do not cook until the rice is golden).

    Push the rice to the side and sauté the onion until soft.

    Stir the rice and the onion together.

    Add chicken broth and bring to a boil.

    Reduce heat, cover and simmer until all the liquid has been absorbed (about 18 minutes or according to package directions).

    Toss lightly with a fork before serving.
