Caribbean Chicken and Rice

List of Ingredients
1 TBSP Oil
1 lb chicken cut up in chunks
2 carrots chopped up
1 onion chopped up
1 1/2 c instant rice uncooked
1 can (14 oz) pineapple tidbits in juice undrained
1 c water
1 green pepper
1/4 c BBQ Sauce
1 tsp ground ginger
Recipe
Heat Oil in large skillet on medium high heat.Add chicken; cook and stir 2 minutes Add carrots and onions and cook 5 minutes or until meat is cooked through.
Stir occasionally.
Stir in remaining ingredients Bring to boil and cover. Remove from heat. Let stand 5 minutes Fluff with fork when serving.
makes 4 servings 1 1/2 cups each.
