    Serves 4

    List of Ingredients




    1 tbsp olive oil
    1 small onion, finely chopped
    1 small red pepper, finely chopped
    1 clove garlic, minced
    1 cup uncooked long grain brown rice
    3 1/2 cups Heinz 25% Less Salt Tomato Juice
    1/2 tsp pepper
    1/4 tsp saffron
    1/2 cup chopped fresh parsley
    1/4 cup golden raisins

    Recipe



    Heat the olive oil in a large skillet set over medium heat. Add the
    onion, red pepper and garlic and cook until softened and fragrant,
    about 6 minutes.

    Add the rice, stirring for 1 minute. Stir in the tomato juice, pepper
    and saffron. Bring to a boil. Reduce the heat to low. Cook, covered,
    for 35 to 40 minutes.

    Uncover the pan and stir in the parsley and raisins. Cook, uncovered
    for an additional 3 to 5 minutes or until almost all the liquid is
    absorbed. Fluff with a fork.

    Twists:

    Twist 1 For a vegetarian entre that provides complete protein, stir in 2 cups drained and rinsed legumes such as chickpeas, kidney beans or black beans during the last 5 minutes of cooking.

    Twist 2 For a one dish meal, stir in 2 cups cooked fish, seafood or lean chicken, into the rice during the last 5 minutes of cooking.

    Twist 3 For a folate boost, stir 3 cups chopped spinach, kale or Swiss chard into the rice during the last 5 minutes of cooking.

    Twist 4 For a flavour twist, omit saffron and substitute chopped fresh basil for the parsley and chopped sun-dried tomato for the raisins.
