Sweet Sticky Rice With Mangoes

List of Ingredients
1 cup water
pinch of salt
1/2 cup brown sweet rice
1/8 cup unsweetened shredded coconut
1/4 teaspoon vanilla extract
1 ripe mango
Recipe
1. Add salt to water and bring to a boil in a medium saucepan with a tight-fitting lid.
2. Add rice and stir to make sure all the rice is covered with water. Cover with lid and reduce heat to simmer. Cook until rice has absorbed all the water, about 20 minutes.
3. Remove from heat, fluff up rice with a fork, and stir in coconut and vanilla. Put the lid back on and let sit for another half hour, off the heat.
4. To serve, place rice on a plate and top with fresh mango slices. Serve immediately.
Makes two servings.
