List of Ingredients
2 1/3 cups almond flour
1/2 cup peanut butter
3 eggs
1/4 cup coconut yoghurt (or water)
1/2 teaspoon salt
1 teaspoon honey (optional)
1/2 teaspoon baking soda Recipe
1. Mix almond flour and peanut butter well, set aside. Beat eggs then mix in yoghurt (or water), salt, honey (if using) and baking soda.
2. Add egg mixture to nut mixture and beat until it firms up.
3. With a bowl of water nearby, roll heaping tablespoons between barely wet hands. Place on a buttered baking sheet and flatten to about 3/4 inch height.
4. Bake at approximately 325 degrees F. for 15 minutes. Remove when lightly browned. Cool and enjoy. This is very nice with butter and homemade strawberry jam.
