ZUCCHINI AND WALNUTS

List of Ingredients
1/3 cup walnut pieces (I used *pine nuts)
1/4 cup *clarified ghee (I used this amount minus 2 TBSP)
2 small or medium zucchini, coarsley shredded
lemon juice
salt and pepper to Taste

1. Saute nuts in ghee until lightly browned (Be careful not to burn.) Remove nuts.
2. Saute zucchini briefly--about a minute to two--in the same pan.
3. Sprinkle with a few drops lemon juice; season.
4. Add nuts toss and serve. YUM!!!!!!
Administrative Note: This recipe originally called for
butter and we substituted clarified ghee which is considered cf but is not always tolerated by those who are
sensitive to casein. Also note; pine nuts are suggested as a substitute for walnuts. Please check your SCD list of acceptable foods to be sure all ingredients in this recipe are approved.
