    3oz olive oil
    1oz red wine vinegar
    3 cloves fresh garlic chopped
    juice of 1 fresh lemon
    salt&pepper to taste
    2 TBSP each fresh oregano and parsley

    whisk together and voila! Works great as a marinade also.
