    I think you'll find this cole slaw a welcome change of pace from the gloppy mayonnaise-based versions. Salting the cabbage gives it extra crunch and is a step you might consider adding to your other slaw recipes.

    List of Ingredients

    1/2 head red or green cabbage, cored and shredded
    1 Tbs (15 ml) salt
    1-2 carrots, shredded
    1 cup (250 ml) rice wine vinegar
    1/2 cup (125 ml) sugar
    2 Tbs (30 ml) finely chopped ginger
    1 tsp (5 ml) red pepper flakes, or to taste

    Recipe

    Toss the cabbage and salt together in a colander. Place a plate on top of the cabbage and weigh it down with a couple of cans. Let drain at room temperature for at least 3 hours. Rinse and drain thoroughly. Combine with the remaining ingredients in a large bowl and toss to combine and dissolve the sugar. Cover and refrigerate for at least 8 hours and up to 24 hours before serving.
    Serves 4 to 6.
