Lima Bean Salad

List of Ingredients
* 1 lb (½ k) lima beans
* 1 large onion cut julienne
* 1 ají amarillo fresco / fresh yellow aji (chili), deveined, seeded and chopped
* 2 tomatoes, peeled, seeded and chopped
* 1 teaspoon oregano
* 1 tablespoon parsley, minced
* 3 tablespoons olive oil
* 1 teaspoon white vinegar
* Juice of 3 key limes
* Salt
* Pepper
* 1 tablespoon minced parsley for garnish
Recipe
Soak beans in water the day before.
Drain water.
Add fresh water to cover beans and cook until soft.
Drain water. Reserve beans.
Combine onion, fresh yellow aji, tomatoes, oregano, parsley, olive oil, vinegar, lime juice, salt and pepper in a medium size bowl.
Add beans.
Sprinkle with an additional tablespoon of minced parsley for garnish.
Serve.
