    List of Ingredients




    1 lb fresh beets, peeled and cut into chunks
    1 medium onion, thinly sliced
    1/4 cup olive oil
    2 Tbls balsamic vinegar
    2 Tbls water
    2 cloves garlic, chopped
    1 Tbls fresh mint leaves, chopped
    1 tsp salt
    1/4 tsp pepper

    Recipe



    In a casserole dish; add beets, onion, oil, vinegar, water, garlic, mint, salt and pepper.

    Toss to mix.

    Bake in preheated 350 F (180 C) oven for 1 1/2 hours or until beets are tender.

    Chill before serving.

    Serves 4
