Sweet and Sour Beet Salad

List of Ingredients
500g/1 lb. fresh beets, peeled and cut into chunks
1 medium onion, thinly sliced
50 ml/1/4 cup olive oil
30 ml/2 tbsp balsamic vinegar
30 ml/2 tbsp water
2 cloves garlic, chopped
15 ml/1 tbsp fresh mint leaves, chopped
5 ml/1 tsp salt
1 ml/1/4 tsp pepper
Recipe
In a casserole dish; add beets, onion, oil, vinegar, water, garlic, mint, salt and pepper. Toss to mix. Bake in preheated 350 F (180 C) oven for 1 1/2 hours or until beets are tender. Chill before serving.
