    List of Ingredients




    1 medium onion, diced
    1 large red bell pepper, diced
    3 to 4 cloves garlic, minced
    3 tablespoons water
    1 tablespoon extra virgin olive oil
    1 28-ounce (795g) can whole, crushed, or diced tomatoes
    1/2 cup (120 ml) dark brown sugar
    1/2 of a 6-ounce (170g) can tomato paste
    1/4 cup (60g) white wine vinegar
    1 tablespoon plus 1 teaspoon chili powder
    1 teaspoon lemon juice
    1/2 teaspoon salt
    1/2 teaspoon smoke flavoring
    1/4 teaspoon allspice
    Pinch of cayenne pepper or to taste

    Recipe



    Combine the onions, bell peppers, garlic, water, and olive oil in a 4-quart (4 liter) saucepan.

    Cook and stir over medium-high heat for about 12 to 15 minutes, or until the onions are soft and lightly browned.

    Add more water as needed to prevent burning the vegetables and set aside.

    Combine the remaining ingredients in a food processor and process until fully pureed.

    Add the seasoned puree to the onions and peppers in the saucepan, and simmer about 5 minutes to incorporate the seasonings.

    NOTE: The recipe makes a good quantity of sauce. It's great for simmering in beans or chili.
