    Karen's Peanut Sauce

    Source of Recipe

    Karen Tressler

    Recipe Introduction

    Origins Unknown

    List of Ingredients

    1 can coconut milk
    1 1/2 cups peanut butter
    1 Tbsp agave
    Chili powder to taste
    Salt to taste

    Recipe

Place coconut milk and peanut butter in a pan and place on burner on low. After it has melted, stir to esure all is well mixed.

Add agave, chili powder, and salt to taste.

Bring to a simmer and stir constantly as the heat increases. Continue stirring until the consistency you wish has been reached. Make any last minute adjustments to the flavor.

Serve over steamed veggies, as a dip for raw veggies, over rice noodles and chicken or tofu....the possibilitites are endless. One of these days I think I'll thin it down with some chicken broth, add some chicken and veggies and try using it for a soup base......

Refrigerates well. You may need to add water to thin it down if it thickens too much. I have not tried freezing but it should freeze well.

    Hope you enjoy it!
