Lori's Sweet Potato Casserole

Recipe Introduction
It is a recipe that I made which was a crowd pleaser plus a few other tips for those just starting out GFCF: I made a new recipe for Thanksgiving this year (2010) and it was a hit. I had known about a similar casserole but never made it until this year since my family doesn't like nuts. Since more than just my family was going to be here this year I decided to opt for nuts! I kind of went off of the exact recipe more to just a "throw it in" type thing so I won't post exact amounts.
List of Ingredients
2 large cans of sweet potatoes and one small (40 oz and 29 oz respectively), mashed
2 beaten eggs
1/2 C of vanilla almond milk (although I think next time I will do orange juice)
about 1 C white sugar (but next time I will do 1/2 brown and 1/2 white)
about 1/4 tsp salt
1/2 tsp of cinnamon
1 tsp vanilla
1/2 C melted GFCF margarine
Topping
1/3 C melted margarine
1 C brown sugar
sprinkle of cinnamon
sprinkle of salt
1/3 C GFCF flour blend (I used a brown rice blend with a little sweet rice but I think any blend would do fine here)
1 C chopped pecans.
Recipe
Mix potatoes through 1/2 C melted GFCF margarine all together.
Spread this all into a greased 13 x 9 and then make the topping.
I crumbled the topping on top of the mashed sweet potatoes and baked for 35 minutes at 350 degrees. It was the hit of the day.
