    Quinoa with Shiitake Gravy

    Original Recipe From Eden Organic Foods

    List of Ingredients

    2 cups Eden Organic Quinoa, washed and drained or Eden Organic Red Quinoa
    3 cups water, for cooking quinoa

    Gravy Ingredients:
    4 cups water
    0.88 ounces Eden Whole Shiitake Mushrooms, 1 package
    1 medium onion, chopped
    1/4 cup Eden Organic Kudzu Root Starch, dissolved in 1/3 cup cold water
    2 Tablespoons Eden Shoyu Soy Sauce(check gf status), or to taste (be sure to use gf soy sauce)
    2 Tablespoons green onions, chopped for garnish

    Recipe

    Cook quinoa according to package directions.

    Bring 4 cups of water to a boil, add the shiitake, cover and simmer 20 minutes.

    Remove shiitake, discard stems and slice caps.

    Place the shiitake back into the boiling water.

    Add onions, and cook another 5 minutes.

    Slowly add the dissolved kudzu, stirring constantly to prevent lumping, until thick and translucent.

    Add the soy sauce, reduce flame to low, and simmer 2 to 3 minutes.

    Serve over quinoa.

    Garnish with chopped green onions.

    Note from BL: I save stems to use in soups rather than discarding them, but honestly they don't have to be discarded at all.
