    Original Recipe From Eden Organic Foods

    List of Ingredients

    14.5 ounces Eden Organic Diced Tomatoes w/Green Chilies, drained, reserve liquid
    1 Tablespoon Eden Extra Virgin Olive Oil
    3 cloves garlic, pressed
    1 medium onion, diced
    1/2 cup Eden Organic Quinoa, washed and drained or Eden Organic Red Quinoa
    1 medium green bell pepper, diced
    1/2 teaspoon chili powder, or to taste
    1 teaspoon ground cumin, optional
    1 pinch Eden Sea Salt
    1 cup water, including reserved tomato liquid

    Recipe

    Drain tomatoes and reserve juice.

    Heat oil and saute' the onions and garlic until translucent.

    Place the tomato juice in a measuring cup.

    Add enough water to equal 1 cup liquid.

    Add the liquid to the sautéed vegetables and bring to a boil.

    Stir in the quinoa, peppers and salt.

    Cover and cook 15 minutes or until liquid is gone.

    Stir in tomatoes and spices.

    Cook another 2 to 4 minutes until hot.

    Serve.

    Note from BL: It isn't necessary to use only Eden products, but for obvious reasons, their recipes use their products. I used Great Value Canned tomatoes from Walmart and some green salsa (also from Walmart).
