    Serves 2 - 4 depending on size of pototoes

    List of Ingredients




    4 medium potatoes, sliced very thin 4
    1/3 cup canola oil
    sea or kosher salt to taste

    Recipe



    Using a pastry brush, brush one side of potatoes with canola
    oil and place greased side down on nonstick cookie sheet. Once sheet is full, brush tops of potatoes with oil.

    Bake in preheated 350 F (180 C) oven for 10 minutes. Turn potatoes and cook for another 5 to 10 minutes. Add a small amount of salt and enjoy!

    Note from BL: do this with any root vegetable from sweet potato to cassava to taro to carrots to turnip. I find it helps if you microwave them a little bit first to shorten cooking time but if you are patient you can do it all in the oven. Be sure to make different kinds of vegetables and then mix them all together. If you are adventurous you can switch up the season with dill, popcorn seasonings, and so forth for a treat the kids will devour.
