I got this idea from Taste of Home 12/2009. I did adjust the recipe to make more than the original stated ( which was only 2 cups) since I was feeding a larger crowd. These were delicious and great for nibbling. I am thinking of adding these to my "Christmas list of food items to give" list. The funny thing was at one point in the evening I saw my 14 year old niece just take the whole bowl to eat them in another room by herself! Lori Bakes
List of Ingredients
•2 egg whites
•6 cups unblanched almonds
•4 teaspoons canola oil
•2/3 cup sugar
•1-1/4 teaspoon cayenne pepper
•1 teaspoon salt
•1 teaspoon ground coriander
•1/2 teaspoon ground cinnamon
•1/4 teaspoon ground allspiceRecipe
•In a large bowl, beat egg white until frothy. Add almonds and oil; stir gently to coat. Combine the remaining ingredients; add to egg white mixture and gently stir to coat. Spread into a 15-in. x 10-in. x 1-in. baking pan coated with cooking spray. Bake at 300° for 18-22 minutes or until lightly browned, stirring once. Cool completely to allow coating to crystalize. Store in an airtight container. Yield: 6 cups.
