Condensed Mushroom Soup (Soy)

Recipe Introduction
This recipe can be used for any type of vegetable in place of mushroom.
List of Ingredients
2 Tbs (30 ml) coconut butter
4 oz (110 g) sliced mushrooms (or 4 oz any type vegetable)
2 Tbs (30 ml) all-purpose GF flour blend (or try potato starch)
1 cup (250 ml) vegetable (or chicken) stock
2 Tbs (30 ml) vermouth or dry white wine (optional)
1/2 cup (125 ml) soy sour cream
Salt and freshly ground pepper to taste
Recipe
Heat the coconut butter in a saucepan over moderate heat and saute the mushrooms in the pan until tender, about 5 minutes.
Stir in the flour and cook for 3 minutes.
Add the stock, optional vermouth, salt, and pepper and bring to a boil,stirring frequently.
Remove from the heat and stir in the sour cream.
Makes about 1 1/2 cups (375 ml).
