    2 Tbls oil
    Large roaster chicken
    1 onion, diced
    6 cloves garlic, minced
    1 tbls cumin (yes tablespoon)
    2 tsp oregano
    1 tsp salt (you can start with less, you your own judgment, depending on meat choice)
    1 tsp NM red chile powder
    1 tsp pepper
    1 small can green chiles (I use mild)
    1 small container (ie 16 oz) frozen green chiles. (mild)
    4 cans gf chicken broth
    1 large can diced tomatoes (with juices)
    4 med potatoes, diced

    I like to add even more cumin and oregano, but us your own preferences.
    night before cook meat in crock pot. Reserve broth for soup and shred meat. I get a large prok roast and make a 2nd meal from the extra meat)
    Dice potatoes (I leave the peel on) and boil for 20 minutes.
    In a huge stock pot, add oil, diced onion, and garlic. Let brown for a couple of minutes. Add all seasonings (cumin through pepper) Add green chiles, broth and diced tomatoes (with juices).
    Drain potatoes and add those. Add meat. Simmer for 20 minutes or more and serve with corn tortillas or cornbread.

    You can also garnish with a little shredded sharp cheddar cheese and some baked corn tortilla strips. Yum! Hope you enjoy this as much as we do. It is a favorite of ours.
