List of Ingredients
1 lb lean ground turkey breast
1/2 Tbls Safflower Oil
1 14 oz jar of Kings Mild Kimchi
1 16 oz can of organic pinto beans rinsed and drained
1/2 cup chopped onion, bell pepper and celery mixture
6 cups of vegetable brothRecipe
In a hot skillet place oil then ground turkey.
Cook turkey until almost done. (Breaking up while cooking.)
Right before turkey is done add chopped vegetable mix.
When turkey is done remove from heat.
In a large pot add turkey mixture, kimchi, beans and vegetable broth.
On high heat, heat until soup starts to boil, stirring occasionally.
Once soup starts to boil reduce to a simmer and cover with lid.
Let soup simmer for 30 minutes, stirring occasionally.
Donna's Notes: If you want to simmer this soup longer than 30 minutes be sure to increase the amount of broth used.
Chicken stock would also work in this recipe as well as any lean meat you might have on hand. If you would like this soup a little spicier Kings has a Spicy Kimchi. The sodium level is a little high so be sure to cook fully before adding salt.
