One Potato Two Potato Soup

Recipe Introduction
Try a blend of different potatoes, like reds and sweet for something extra special. Makes 4 to 6 servings.
List of Ingredients
1 tbsp vegetable oil
3 cups potatoes, peeled and diced
1 cup celery, finely diced
1/4 cup onion, finely chopped
2 cups chicken or vegetable broth
3 cups Heinz Tomato Juice
1 tsp pepper
1/2 tsp salt
1/4 cup soy yogurt or soy sour creamRecipe
Heat oil over medium-high heat in a large saucepan. Add potatoes, celery and onion; saut� until softened, about 5 minutes. Add broth and simmer until potatoes are tender, about 15 minutes.
Strain mixture through a sieve, reserving the liquid. Puree half of the vegetable mixture in a blender or food processor. Return the liquid and both vegetable mixtures to the pan.
Stir in the tomato juice; season with pepper and salt. Heat until soup is steaming but not bubbling. Remove from heat and whisk in the yogurt or sour cream. Serve immediately.
Twists:
Twist 1 For a hearty, fibre-rich soup, add a 1/2 cup drained and rinsed, beans near the end of cooking.
Twist 2 For a kid-friendly lunch, top the soup with shredded soy cheese and serve with GF garlic bread.
Twist 3 For an attractive garnish, sprinkle the soup with chopped chives or thinly sliced green onions before serving.
