    2 tablespoons oil
    1 1/4 cups onion, chopped
    1 1/2 teaspoons garlic powder
    2 tablespoons chili powder
    1/4 teaspoon dried basil
    1/4 teaspoon cumin
    2 cups zucchini, diced
    1 cup carrots, sliced
    2 14.5-ounce cans diced tomatoes
    15-ounce can garbanzo beans, drained
    15-ounce can red kidney beans, undrained
    8-ounce can tomato sauce, optional

    This recipe is healthy, hearty, thrifty and easy to make. It takes just a few pantry ingredients along with the zucchini so it is convenient as well. That is why it is one of my favorite recipes.

    In a Dutch oven, heat oil over medium heat; add onion and saute until soft and tender. Add remaining ingredients. Bring to a boil; reduce heat and cook 30 to 35 minutes.
    If chili is too thick for your preference you can add tomato sauce and a small amount of water at this time.

    Yields 6 servings.
