    Chipotle Black Bean Spread

    Recipe Introduction

    List of Ingredients

    1/2 cup finely chopped onions
    1 teaspoon ground coriander
    1 teaspoon ground cumin
    1 tablespoon canola oil
    1/4 cup of chopped fresh cilantro shopping list
    1 15 oz can of black beans, drained and rinsed
    3 tablespoons lime juice
    1 teaspoon finely chopped canned chipotle chili peppers in adobo sauce
    1/4 teaspoon salt


    Recipe

    In a small saucepan cook onions, coriander and cumin in hot oil for about 10 minutes, stirring occasionally. (should be very tender) remove from heat and stir in cilantro.

    Transfer onion to the food processor and add drained black beans, lime juice, chipotle chili peppers and salt and process until smooth.

    Can be used immediately or kept in the fridge for 3 days. Great sandwich filling or as an addition to corn tortillas or tacos.
