    Morusa De Pallares (Lima Beans Puree)

    Recipe Introduction

    Original recipe from "Yanuq Cooking in Peru"

    List of Ingredients

    2 lb 4 oz (1 k) lima beans
    Approximately ½ cup cf margarine or ghee
    Salt
    Pepper

    Recipe

    Place lima beans in a large saucepan and cover with water. There is no need to soak them in water previously.

    Cook lima beans at moderate heat.

    Boil for 5 minutes or until skin comes out easily.

    Drain and skin remaining lima beans.

    Return to pan and cover with water.

    Return to heat until lima beans are soft and tender.

    Drain and blend beans with the necessary amount of cooking liquid.

    Force through a fine sieve.

    Add margarine or ghee and stir to combine. Puree must have a soft and creamy texture.

    Season with salt and pepper.

    Serve hot with gf bread, crackers or chips.

    Yield: 6 – 8 servings

    Administrator's Notes: Ghee is a dairy product. Those who are extremely sensitive may react to ghee.
